These ready to roast green beans come from Ketiara KOPEPI a coffee cooperative based in Sumatra, Indonesia. Led by Rahmah Ketiara, they have built a strong reputation for Fair Trade coffee since their formation in 2008. Spread across 19 villages in the Bener Meriah and Aceh Tengah regions of Sumatra. The Cooperative is very innovative and community minded, they actively push for improvements and recently collaborated on a project to maintain agroforestry balance among their growers and provide free seedlings (coffee, avocado, oranges) while offering training on production techniques.
Sumatra has a particular way of processing the coffee called Giling Basah. Farmers deliver the “Gabah” which is wet parchment coffee with around a 45% moisture content.
The Gabah is then dried immediately for around a day prior to hulling. After hulling the “Labu” – wet green bean at 30% moisture -takes a further two days to become “Assalan” which has a 20% moisture content.
Then the Assalan is transported to the main dry mill where it will be further dried for half a day to 12-13% as unsorted green bean which is then ready for picking (removing any stones or defects, repeated as necessary), grading and export.
Cup profile: Once roasted and ground, this coffee exhibits diverse flavours, including spice, chocolate, guava, orange, brown sugar and black pepper.
